The Clarified Piña Colada

Ingredients:

• 20ml Le Fruit de MONIN Pineapple
• 10ml Le Fruit de MONIN Coconut 
• 15ml Le Concentré de MONIN Lemon Rantcho
• 150ml Coconut water
• 50ml Milk
• 45ml Dark rum 

Preparation:

1. Mix the fruit mixes, coconut water, and citric solutions together. 

2. Add rum if desired.

3. In a separate container, pour in the milk and slowly add the mixture to create a curdled effect, stirring gently to combine thoroughly.

4. Filter the mixture through a paper filter until a clear liquid is visible. 

5. Fill a glass with ice and stir until chilled.
