One of our favourite sparkling wines from the culinary and viticultural mecca of Emilia-Romagna. Made from the local Pignoletto variety in the col fondo style whereby the wine remains with the dead yeast (lees) in bottle, it's beautifully textured with preserved lemon, chamomile and mineral aromas supported by fine bubbles and gentle acidity.
