Sorachi Brut is a single barrel bottling of fine strong beer. A simple grist of pilsner and wheat malt plus large quantities of Columbus and Sorachi Ace hops made a bitter and highly aromatic wort. This underwent spontaneous fermentation in several white Burgundy barrels. One barrel was deemed too good to use in a blend, so is presented here as a single barrel bottling.
